Since there is a shortage of affordable housing for the people with mental illness,the Government should expand the number of safe,affordable independent housing units in order make recovery possible.

Spinach Tomato Sauce with Penne

Whole grain pasta is an excellent source of fiber,minerals,antioxidants,lignans,and other phytonutrients.

Tomatoes are a great vegetable loaded with a variety of vital nutrients. They also make a wonderful addition to a -healthy and cancer-preventing diet. So whether it is by tomato soup,tomato sauce,tomato chunks in salad or,increasing your intake of tomatoes helps against colon and prostate cancer,diabetes,migraines and heart disease.

  • 12-16 oz penne (pasta)
  • 1-2 cloves garlic,chopped finely or minced
  • 1 can (28 oz) tomatoes with liquid (or fresh tomatoes,if preferred)
  • 1-2 onions,chopped
  • 2-3 cups chopped spinach
  • 1/2-1 tsp cayenne or red pepper flakes
  • salt &pepper to taste

Cook penne in boiling water for 8-10 minutes. Drain and set aside. In a pan,steam saute onions and garlic in 2 tbsp water (and soya sauce or wine) for 1-2 minutes or until onions are translucent. Add cayenne,salt &pepper. Add chopped spinach and cook for 3-4 minutes over medium heat until spinach wilts. If too dry,add another tbsp of water. Add tomatoes and simmer for 8-12 minutes. Add pasta and toss. Serve immediately.

Note: 1/2 to 1 cup grated parmesan cheese (or 1/4 cup ground almonds mixed with 1/2 cup nutritional yeast) may be sprinkled on top just before serving. Whole wheat pasta may also be used.
